The Meat Cutter is essential to maintaining safe cutting practices, consistent product presentation, and efficient inventory flow.

Position Summary

The Retail Meat Cutter is responsible for cutting, trimming, preparing, wrapping, and merchandising a variety of fresh meats including beef, pork, poultry, sausages, marinated products, and value-added deli items. The role also includes inventory ordering, receiving, stock rotation, quality monitoring, and customer service.

This position requires hands-on skill with meat cutting tools, food-safety knowledge, strong attention to detail, and the ability to maintain accurate product handling in a fast-paced retail environment.

Duties and Responsibilities

Core tasks: cutting, trimming, preparing meats; packaging; maintaining displays; customer service; inventory handling.

Meat Cutting & Preparation

• Cut, trim, portion, and prepare a variety of fresh meats (beef, pork, chicken) following store specifications and food-safety standards.
• Prepare in-store made sausages, marinated meats, and other value-added products.
• Operate knives, saws, and meat-cutting equipment safely and efficiently.
• Ensure all products are cut, wrapped, and labeled with proper pricing, weights, dates, and best-before details.
• Maintain attractive and compliant displays in the meat and deli sections.

Quality Control & Food Safety

• Monitor ongoing product quality in display cases, checking for discolouration, leaking packages, broken seals, and expired items.
• Follow strict sanitation and hygiene procedures for equipment, tools, and work areas.
• Reduce waste by rotating stock properly and ensuring timely sale of all products.
• Ensure products meet all food-safety regulations and internal standards.

 

Customer Service

• Assist customers with product selection, custom orders, and special cuts.
• Provide cooking tips, preparation advice, and product recommendations.
• Prepare and fill customer orders accurately and on time.

Inventory, Ordering & Receiving

• Order fresh meat, frozen items, and deli products based on inventory needs and daily order cut-off schedules.
• Receive deliveries, check invoices, verify quantities, confirm expiry dates, and identify shortages or quality issues.
• Stock shelves, freezers, coolers, and deli cases as required.
• Source products locally where appropriate to meet customer needs.
• Prepare weekly sales needs and adjust ordering levels accordingly.

Merchandising & Pricing

• Ensure accurate pricing at both cost and retail levels.
• Set up attractive displays that promote sales and highlight weekly specials.
• Maintain proper signage, labels, and in-store promotions.

Required Skills

  • Strong knowledge of meat cuts, trimming, portioning, and sausage preparation.

  • Knowledge of food-safety and hygiene standards.
  • Ability to manage stock rotation, product freshness, and waste reduction.
  • Customer service skills and willingness to assist with custom orders.
  • Must be willing to live in Elrose or nearby community.
  • Preferred
  • Experience creating visually appealing meat displays.
  • Inventory management and product rotation skills.
  • Strong knife handling, attention to detail, and quality-control abilities.
  • Experience minimizing waste and maintaining freshness
  • Customer service experience, including product recommendations and assisting with custom needs
  • Experience preparing sausages and value-added meat products through RMS store training and Polytechnic coursework
  • Knowledge of marinated product preparation, labeling, and packaging.

Qualifications

  • Retail Meat Specialist Certificate (Saskatchewan Polytechnic or equivalent)
  • Min High School Diploma
  • Must hold a valid Food Handlers Certificate
